Tacos de Papa
Tacos de Papa with homemade salsa. I have been lucky to spend many a day at a friend’s house munching on these potato tacos. Super Simple Sunday is what we are taco’ing about.
Ingredients
1 tbsp chopped Cilantro
Juice from 1 lime
4-5 Roma tomatoes chopped
2 red Jalapeños seeded and chopped
2 cloves of garlic smashed
1-2 cups leftover mashed potatoes
10-20 small corn tortillas ( depends on how many potatoes you have)
Vegetable oil
Directions: Put cilantro, garlic, lime juice, tomatoes, red jalapeños, and salt in a food processor. Pulse till blended and smooth. Set aside.
Heat up enough oil to cover the bottom of a large skillet. When the oil is ready to bring our corn tortillas. Put a heaping tablespoon in the middle of the tortilla and fold over. Gently place taco in oil and brown then flip and brown the other side. * *put them in the oil right after they are made or they will crack.
Drain in some towels and serve with salsa. We serve them also with Cojita cheese, shredded cabbage, and Crema.
