Evangeline Smoked Sausage & Peppers Po-Boy
Just like Evangeline Maid Bread, smoked meats have been a long time staple in the cuisine of Acadiana. We love smoked meats. We love smoked meats so much we celebrate it with an annual festival in Evangeline Parish - Le Festival de la Viande Boucanne (The Smoked Meat Festival).
Always a great combo is smoked sausage on Evangeline Maid Po-Boy Rolls. Some like theirs dressed with mayo or barbecue sauce. Since bell peppers are in abundance right now, we thought why not a Cajun variation of Italian Sausage and Peppers.
