Refrigerator Pickles

Super Simple Sunday! Homemade Refrigerator Pickles. It’s about time that the cucumbers start growing at an

alarming rate. These are a summer staple in our fridge.
3 4 inch pickling cucumbers - cut in wedges
1/4 cup sweet onion thinly sliced
4-5 sprigs fresh dill weed
1/2 cup apple cider vinegar
1/2 cup water
2 cloves garlic smashed
1 1/2 teaspoons kosher salt
1/4 tsp sugar
1/4 tsp whole peppercorns
1/4 tsp whole mustard seeds
Red Pepper Flakes to taste.

Pack a pint sized jar cucumbers, onions and dill weed. Leave a 1/2 in space at the top for liquid.
In a small pot heat the vinegar, water, garlic and all spices to a gentle simmer. Add salt and sugar and stir to dissolve.
Take off the heat and cool. Once cooked dill the jar with brine, making sure everything is covered. Put on lid and refrigerate for 25 hours before eating.
* Since I have hyperactive cucumber plants I make this in larger batches in bowls covering the top tightly with Saran Wrap.
