Shrimp and Garlic Creamy Rice aka Freetown Fried Rice.
I know a lot of us just saw our incomes plummet overnight. So I am sharing some of my recipes for repurposing leftovers and stretching those food budgets as far as they can go. This dish is a great use of leftover rice and whatever proteins or veggies you have on hand. I used shrimp because I already had some leftover.
4 tbs butter
1 small onion finely diced
3 cloves of garlic minced
1 cup cooked shrimp( or whatever protein you have on hand)
3-4 cups leftover cold rice
1/2-1 cup milk or cream
1/2 tablespoon Cajun seasoning or
Salt and Pepper to taste
Melt butter in a wok or saucepan. Add onion and cook until translucent. Add garlic and cook for 30 seconds. Add rice and thoroughly combine. Add 1/2 cup milk first and stir. Place lid and top and let cook on medium-low for a couple of minutes.
Stir and check to see if the rice has plumped back up. Add additional milk if needed and put the lid back in and let cook for a couple of minutes. Once the rice is soft but not mushy add in shrimp and seasoning and stir. * sub another leftover meat or veggie * Or add both.
