Thanksgiving Hushpuppies

Thanksgiving Hushpuppies. I try to turn my leftovers into a whole new dish in the hopes my brooding teenagers won’t notice. I like mine stuffed with pepper jack cheese and Lucius likes then plain. The choice is yours. 
4 cups leftover cornbread dressing 
1-2 eggs 
12 cubes pepper jack cheese(optional)
Vegetable oil for frying. 
Mash dressing in large bowl. Add 1 egg and combine if it sticks together well you will not need the additional egg. If. It add additional egg. Form into balls and if you want stuff them with a small cube of cheese. Heat Oil over high heat and fry hushpuppies till golden brown.
