Home Fries Cajun Style
1 1/2 lbs Russet(Irish) cubed, about 1/2 in.
2 tbsp veggie oil
2 tbsp butter
1 medium onion, diced
2-3 tsp Cajun Seasoning
Salt and Pepper to taste
Parboil potatoes till they have just a little give but not mushy. ( I cheat here and put them in cold water in a glass casserole and cook them for 5 minutes in the microwave. Strain and set aside.
In a large cast iron heat up 1 tbsp of oil. Add onions and S&P to taste. Cooke till they are translucent, about 5 minutes. Remove onions and set aside.
Add remaining oil and butter to pan and heat till oil is shimmering. Add potatoes and toss to coat. Spread the potatoes in a single layer across the bottom ( you may have to work in batches) Cook the potatoes till nice and brown, about 6 minutes then flip to cook other side. I add more butter and oil as necessary and usually gently stir them at the end to get them as browned as possible.
Once browned add onions and spices and gently stir to combine.
