Easy Creamy Pasta/ Sunday Pasta/ Fridge Pasta
This pasta has different names because it changes with whatever we have on hand. Use this is a guide for the next time you have an envie for pasta but don’t want to actually go to the store.
Recipe:
6 slices Bacon cut into 1/4 in pieces
1 lb Medium Shrimp peeled
1 tsp Cajun Seasoning or Crushed Red Pepper
Salt and Pepper
2 Roma tomatoes chopped
3 cups fresh spinach
3 cloves garlic chopped
1 cup heavy cream
1 cup Monterey Jack or Mozzarella
1/2 c Parmesan or Asiago cheese
12 oz cooked pasta
In a large heavy bottomed skillet cook bacon till crispy. Remove from pan and set aside on a paper towel.
Pour all but about a tbsp of bacon fat out. Reheat over medium heat.
Add shrimp to pan and season with spices and salt. Cook till pink flipping halfway through, about 2 min per side.
Add tomatoes and spinach and cook till spinach is wilted. Add heavy cream and cheeses. Stir and let simmer for 2 minutes.
Add in bacon and cooked pasta and stir to combine.
* we have subbed ham, peas, asparagus etc. the only thing to remember is you need a little oil or fat to cook with if you don’t use bacon.
