Breakfast Tacos
My girls absolute favorite camping food. Breakfast tacos. At home I use two pans but camping we use just one. The choice is up to you, the recipe will be written camping style.
Breakfast Tacos
6 eggs
1 tbsp milk
12 strips of bacon
2 medium to large potatoes, small diced (leftover baked ones work great)
1 small onion, diced
Cajun seasoning or Salt&Pepper
6-8 flour tortillas
2-3 tbsp softned Butter.
If you haven’t brought pre baked potatoes, put about a cup of water in your skillet and bring to a boil. Add diced potatoes and parboil, about 5 minutes. Strain and set aside.
Wipe skillet dry and put over medium-high heat. Add bacon and cook till crisp, set aside on paper lined plate. Reserve grease in pan. In reserved grease on medium-high heat add potatoes and onions. Cook till browned and crispy. Remove and season while hot. Set aside and wipe pan clean. In a medium bowl scramble eggs with milk. Heat pan over medium- low heat. Cook eggs stirring frequently till soft scrambled. Remove from heat. Now here is where I get fancy. I put my eggs on a plate and wipe the skillet clean. Coat each tortilla with butter and toast them in the pan in both sides. It takes about 5-10 seconds per side. My girls line up to get their hot tortilla and then head to the fixings to make their breakfast tacos. We usually serve them with sour cream, shredded cheese, avocado, salsa and hot sauce. * warning if you make these on a camping trip they will insist on it everytime.
