When Everything Hurts Pasta
It is time for another quick and easy recipe. We made this video a while ago but we were waiting for the right time to post it.
I don’t know about y’all but this holiday season has me running around like a chicken with her head cut off. I couldn’t just accept the usual insanity of the holidays, working a full-time job, and raising three children. I had to add more too it, of course. In the past three weeks, I have done two pops ups for 30 -50 people and cooked Thanksgiving dinner for my whole family. In between, I worked my job as a Realtor, fitting in food prep between appointments. I have browned 30 lbs of beef bones, cooked 15 gallons of beef stock, browned 60 pork kebabs, cooked 10 lbs of bacon... you're getting the idea.
My kitchen floors at the end of the day became as slippery as an Ice skating rink. There I am cooking till 2 am and sliding across floor looking like a baby cow trying to find its legs. I did it! I pulled it off! But, the after effects are not pretty. In the process my back gave out, I got some sort of weird armpit injury, caught a cold the day after I finished and burnt four of my fingertips (I would like to say this was while in the process but no, I was heating up pizza and stuck my hand directly into a hot cast iron pan). To give you a mental image I am now coughing and humbling around like a 90-year-old arthritic woman with emphysema, all the while with a heating pad in my armpit and four blister covered fingertips. You know its bad when your snotty pre-teen says “Mom should you be even walking around?” with true concern. Hopefully, since I have put myself into hermit mode until my presence will not scare small children, I will get more recipes on the blog. For now, I couldn’t think of better time to put one of my go-to quick weeknight meals on the blog. Enjoy!
