Spicy Miso Eggplant
Spicy Miso Eggplant! Eggplants are plentiful right now. This is a quick recipe that is great for when your looking for a vegetarian dish or cooking on a budget.
Spicy Miso Eggplant:
1 small Eggplant cut into bite size pieces(about 3 cups)
2 tbsps Veggie oil
1 tbsp Hot sesame oil
2 tbsp Sake
1 1/2 tbsp Mirin
1 1/2 tbsp Soy sauce
1 tbsp Sugar
1 tbsp Miso paste
3 tbsp Water
1 Green Onion, chopped
1. Soak eggplant in cold water for 10 minutes.
2. While eggplant soaks combine: sake, mirin and soy sauce in a small bowl and set aside.
3. Drain and pat dry eggplant.
4. Heat up veggie and hot sesame oil in a large saucepan or wok over medium heat.
5. Add eggplant and cook 3-4 minutes till soft.
6. Turn heat to high and add the reserved sake sauce. Cook for one minute.
7. Add sugar and cook for one minute, stir well.
8. Add miso paste and water. Stir and cook for 3-4 minutes till Miso is melted and eggplant is soft.
9. Serve with jasmine rice and chopped green onions.
