Paneed Chicken

This paneed Chicken is simple and I just pair it with whatever leftovers I have in hand. Today it was creamed spinach. The breading is whatever I have in the pantry that may be in the last days of its life. This time I used crushed saltines and cheez-its 
Recipe: 
3-4 chicken breasts pounded to about 1/2 inches 
4 eggs beaten 
1 tbl Mustard(optional) 
2-3 cups finely crushed cracker crumbs
1/2 tbl Cajun seasoning or salt and pepper to taste 
Veggie oil 
Put eggs in one shallow pan and combine with mustard 
Place crumbs and seasoning in a separate shallow pan 
Dip chicken in eggs mixture and then in crumb mixture making sure to full coat. Place chicken on wire racks to let crumbs set( about five minutes) 
Heat 3 tbl of oil in heavy bottomed skillet till almost smoking. 
Place chicken in skillet and cook to golden brown on both sides. About 2-3 minutes per side. 
Place on paper towel lined plate. Once cooked slightly serve with your favorite side.
