Easy Stovetop Lasagna
One Pot Lasagna. When you really want lasagna but don’t want to take the whole day and destroy your kitchen.
1 tbsp Olive Oil
2 cloves garlic minced
3/4-1 lb ground beef
1(14..5 oz) can diced tomatoes
16 oz tomato sauce
Salt and pepper to taste
8 oz oven ready lasagna noodles broken into small pieces
1 cup shredded Mozzarella
1/4 cup shredded Parmesan
1 cup Ricotta cheese
Chopped parsley
Heat up olive oil in large skillet. Add garlic and cook till fragrant. Add ground beef and brown. Stir in diced tomatoes, tomato sauce and seasonings. Bring to a simmer and stir in pasta and 1 1/2 cups of water. Bring to a slow boil and reduce heat. Cover and cook 13-15 minutes till pasta is done. You may need to add more water if it takes longer. Remove from heat and stir in Mozzarella and Parmesan. Stir to combine. Put scoops of Ricotta in top and cover till Ricotta is warmed through, about 5 minutes. Garnish with parsley and serve.
