Chicken Caeser Salad
Super Simple Sunday! Grilled Chicken Caesar Salad. This is Evye’s favorite meal, she’s actually trying to steal some as I type this. I’m going to be honest about a few things here. First, I don’t always grill the chicken, this is why George Foreman is a double millionaire. If I’m short on time on the inside grilling machine it goes. Second, I don’t always have time to marinate either. In a pinch a sprinkle of Cajun seasoning has to do. Third, I don’t make croutons. There is no such thing as left over bread in my house. I do always make own Caesar though it so easy and so much better than store bought.
Recipe.
Marinade for chicken-
1/2 cup Olive Oil
1/4 cup Red Wine Vinegar
1 tsp Salt( or Cajun Seasoning)
1 tsp Black Pepper
Juice of 1 Lemon
3 Garlic Cloves, minced.
4 Boneless, Skinless Chicken Breast’s
Dressing:
4 Anchovy Fillets
2 Garlic Cloves
2 tbsps Dijon Mustard
1 tbsp Balsamic Vinegar
1/2 Lemon juiced
1 tsp Worcestershire Sauce
1/2 cup Olive Oil
Pinch of Salt and Pepper
1/4 cup Parmesan cheese, freshly grated.
1 Egg Yolk.
Salad:
4 hearts Romaine Lettuce, chopped
Croutons
Parmesan Cheese, freshly shaved
Grilled Chicken, sliced
Caesar Dressing.
Chicken: Whisk all ingredients of marinate together and pour over chicken. Marinate for 2-8 hours.
Dressing: Place Anchovies, garlic, mustard,vinegar,lemon juice and Worcestershire sauce in a blender. Blend till smooth. Turn blender to low and slowly pour in olive oil till incorporated and creamy. Add salt and pepper, Parmesan and egg yolk. Blend until smooth.
When ready grill chicken 6-9 minutes per side until no longer pink. Set aside to rest for a couple minutes.
Put Romaine in a large bowl and drizzle with your desired amount of dressing. Toss to coat.
Slice chicken and top lettuce with chicken, croutons and Parmesan.
