Spicy Shrimp Pesto Pasta Salad

Super Simple Sunday:
A simple and light pasta salad for these hot days. With some added spice to keep it interesting.

Ingredents
2 cloves garlic peeled
1 jalapeño pepper- top and seeds removed ( for extra spicy leave seeds)
1/4 cup pine nuts
2 tbsp grated Parmesan
2 packed cups fresh basil leaves
1 tsp lemon juice
1/2 cup Olive Oil
1 tsp Cayenne Pepper
Salt and fresh ground black pepper- to taste
1 lb rotini pasta cooked and cooled
1 lb small shrimp cooked and cooled


In a food processor turned on add garlic till it’s a fine mince.Add jalapeño process till minced. Add pine nuts and cheese, process till smooth. Add basil and lemon juice, process till smooth( you will have to scrape down the sides a couple times to make sure it’s well mixed). While processor is running slowly add oil. Once smooth add Cayenne, salt and pepper, pulse till combined. In a large bowl combine pesto, pasta and shrimp. Stir till well combined and serve.
