Cajun Buttermilk Fried Chicken

Who doesn’t love Fried Chicken? Don’t be scared by all the steps, it is actually very easy to make and this recipe gives you options to use a method you prefer best. A bonus is my trick for keeping that breading giving the chicken a gentle hug.

I never doubted the power of fried chicken but I never completely understood how intoxicating it is until one fateful hot and humid Louisiana night. I had the bright idea to fry chicken for a fourth of July celebration. Let me set the scene for you. I am wearing an old t-shirt with cut off sleeves, covered in flour and grease stains. Sweat rolling from every part of my body as I drop piece after piece of chicken into pots of hot oil the only thing hotter was the flames under them.

To say I felt unattractive is a massive understatement. As I stand there wondering if my fat was melting away as fast as my will to carry on, a male acquaintance saunters in. I assumed he was there to check the progress of the next batch about to come out. He looks at me and says “ Man, this is the sexiest thing I think I have ever seen, you should let me take you out sometime”. Could he be serious ? I look like a trucker and smell like a deadly combo of grease, chicken and sweat. I chalked it up to friendly flirting to thank me for sacrificing my sanity to make everyone happy.

I was wrong he texted me soon after and we planned a lunch. Nothing came of that lunch. Maybe it was because we didn’t match, maybe it was because I wasn’t ready or maybe just maybe it is because the evil temptress that is the smell of fried chicken. We will never know. What we do know is that fried chicken contains more power than any fancy lingerie or flirting ever will. No wonder our MawMaws had so many kids.
